From Ōita, to Singapore.

An invitation into Ōita Prefecture, where Isaac Tan, Group Executive Chef of Commonwealth Concepts and Shingo Iijima, Head Chef of Fat Cow, embarked on a trade and provenance immersion hosted by the prefecture.

From wagyu farms and dairy producers to the region’s seafood, vegetables, fruits, and beverages, the journey offered a deeper understanding of Oita’s terroir - one that now shapes the inspiration and flavours behind our Ōita Omakase.

This collaboration begins with an exclusive, one-night-only Oita Omakase dinner at Fat Cow on 16 January 2026, marking the first expression of the journey. Seats are limited and reservations are now open. The collaboration will continue across the group, extending to Miyoshi and Kinki Restaurant + Bar, with more to be revealed in the weeks ahead.
